The Pasta Academy- Culurgiones- Sardinian Ravioli (Italian Pierogi) $90

Culurgiones are also referred to as Sardinian Ravioli. The unique shape looks like a braid or sheaf of wheat. The folding technique makes this happen and practice makes perfect. The filling is also unique. Unlike ricotta in an Italian ravioli, this filling is potato, pecorino, and herbs. To me it is like an Italian version of pierogi. They are usually served with a simple tomato sauce and they are so delicious.
